Merry Mondays

Merry Mondays is a weekly meme hosted here @ Mom With a Reading Problem during the month of December to celebrate Christmas and the holiday season. Each week a different topic centered around the holidays will be discussed.

Only 11 days left til Christmas 😀 Man this month is going fast! As we get closer to the holiday, I start thinking about all the family parties which inevitably leaves me thinking about all the FOOD at these parties. Does anyone else wind up gorging themselves over the holidays? Or is it just me? I always feel like Joey in Friends and I want to pull out my turkey pants 😉

This week’s topic is “Favorite Christmas Cookie Recipe / Dessert Recipe” suggested by Jessica @ Bottles & Books Reviews. My favorite thing at these dinners is the dessert table. There are always SO many good treats to grab. I’ve made several myself over the years: Triple Chocolate Mocha Cake, Pound Cake, Dirt Cake, etc. BUT last year I found my favorite….M&M cookies. They are so delicious and my picky little son loves them!

I discovered the recipe by accident and it is actually a combination of two Pinterest recipes: Lil’Luna’s Soft M&M Cookies and the Food Lush’s Fluffiest Chocolate Chip Cookies Ever. (Excuse my sorry excuse for a picture…I’m blog about books not food 😉 )

Tastes Just Like the Mall’s M&M Cookies

Ingredients:

  • 1c Brown Sugar
  • 1c Sugar
  • 1/2c Butter, softened
  • 1/2c oil
  • 2 eggs
  • 1tsp baking powder
  • 1tsp salt
  • 1tsp baking soda
  • 1tsp vanilla
  • 3c Flour
  • 1 bag of mini M&M’s

Imagine them with red & green 😉

Instructions:

  1. In standing mixer, cream butter, oil, and sugars.
  2. Add eggs one at a time, beat until well mixed.
  3. Slowly add dry ingredients while mixing, then add vanilla.
  4. Fold in the entire bag of M&M’s (I use the mini ones OR you could chop the regular size). Save about a half cup to top cookies with.
  5. Place in balls on greased pan (or line pan with parchment paper, makes for easy clean-up). Roll balls in saved M&M’s.
  6. Bake at 350 for 10 minutes…if you’re like me and like your cookie to be slightly undercooked, these are perfect at 8 minutes 😉
